Uncle Banks zucchini salad, a delicious winter salad
Today we'll prepare Uncle Ben's zucchini for the winter. This tomato-based recipe will appeal to many, as it's quick and easy. The salad turns out to be very interesting; the base, of course, is a variety of vegetables, and what ties it all together is a delicious sauce that is created when all the ingredients are cooked.
The recipe calls for aromatic sweet peppers, which, as you can imagine, add a special and meaningful touch to the entire dish. If you enjoy spicy appetizers, you can spice up Uncle Ben's by adding hot peppers and garlic. Uncle Ben's can be served with any dish—porridge, potatoes, meat, fish, and so on.
Ingredients:
- zucchini – 0.5 kg,
- sweet pepper – 2 pcs.,
- onion – 1 pc.,
- tomato paste – 1 tbsp.,
- water – 100 ml,
- sugar – 1 tbsp,
- salt – 1 tsp,
- vegetable oil – 50 ml,
- vinegar – 1 tbsp.
How to make Uncle Banks zucchini with tomato paste
Wash the sweet, aromatic pepper, then cut it in half and remove the seeds. Rinse the pepper and cut it into cubes or strips, whichever you prefer.
Wash and dry the zucchini; it's best to use young zucchini for this preparation. Cut the zucchini into cubes.
Peel and rinse the onion, cut into half rings.
Place all ingredients in a saucepan, pour in the oil, tomato paste, and water. Add salt and sugar, then heat the pan.
Cook the salad for 20 minutes, then add a splash of vinegar at the end. Stir everything together and remove from heat.
Place the Uncle Banks zucchini salad into sterilized jars, roll them up immediately and place them upside down, then wrap them in a blanket and let them cool for 24 hours.
