Spicy eggplant with cilantro, garlic and chili

Eggplant with cilantro is a spicy and savory appetizer inspired by Georgian cuisine. The combination of eggplant with garlic, cilantro, chili, and sunflower oil creates a simply amazing flavor for this winter preparation.
The recipe is simple; we recommend preparing the snack in small jars if you're not planning on hosting numerous parties.
Cooking time is 45 minutes. The ingredients listed in the recipe make several 380g jars.
Ingredients:
- eggplants – 1 kg;
- cilantro – 150 g;
- garlic – 2 heads;
- chili pepper – pcs.;
- apple cider vinegar – 60 ml;
- sunflower oil – 210 ml;
- salt – 25 g.
How to prepare eggplant with cilantro for the winter
Wash the cilantro bunch thoroughly and dry it on a towel or in a salad spinner. Tear the greens from the stems and chop finely.
Crush the chili peppers with your hands, trim off the ends, and shake out the seeds. Cut the peppers into rings. If you want a very spicy snack, there's no need to remove the seeds.
Peel the garlic cloves, crush them with a knife, and chop them finely. You can also press the cloves through a garlic press.
Next, add plain table salt to the bowl with cilantro, garlic and pepper, and pour in the apple cider vinegar.
Mix the seasoning thoroughly and leave at room temperature.
Now let's prepare the eggplants. Wash them thoroughly and cut off the stems.
Cut the eggplants into thick circles.
Heat a frying pan and grease it with vegetable oil. Fry the eggplant slices until golden brown.
We sterilize the cleaned jars over steam or dry them in the oven.
Heat the sunflower oil until the first smoke appears.
Place a couple of spoons of seasoning at the bottom of the jar, then the eggplants.
Fill the jar to the shoulders and pour in the hot oil. The vegetables don't need to be packed tightly; the oil should fill the gaps.
We close the jars with sterilized lids and place them in a saucepan with hot water.
Sterilize containers up to 500g in capacity for 15 minutes. Seal tightly and turn upside down.
After cooling, put it in a cool place.
Storage temperature from +3 to +10 degrees Celsius.
