- For pickling, they should be picked when they're still soft. Choose medium-sized shoots with thin, soft skin.

- Use small jars for storing garlic scapes over the winter. It's much more convenient to use the prepared garlic immediately than to leave it uncovered.
- Immediately before canning, garlic shoots are usually scalded with boiling water, and then necessarily doused with cold water.
- If you prefer a non-sterilizing method, you can do the following: pour the hot marinade over the greens and let them sit for about 15 minutes. Then, pour the marinade back into the pan and bring to a boil. You can pour the marinade over the stalks and roll them up.

Classic winter arrows
What you will need:
- garlic shoots 500 gr.;
- a couple of cloves of garlic;
- hot red pepper, peppercorns and allspice black;
- carnation.
For the marinade:
- water – 1 l;
- table vinegar (9%) – 100 ml;
- approximately 50 grams of sugar and salt.
How to pickle garlic shoots in the most simple way?
First, you need to boil the garlic scapes. This will take a little time, three to four minutes, no more.
Meanwhile, prepare the marinade. Pour vinegar into boiling water and add salt and sugar.
Place all the spices – peppers, cloves and garlic cloves – at the bottom of the jar.
Pour the marinade over the entire contents. The jars must be sealed immediately.
The garlic scapes appetizer is ready. Now they can await their time in the pantry or cellar.

Arrows for the winter “Korean style”
Asian cuisine is spicy and distinctive. Korean cuisine, however, usually leaves no one indifferent. Korean housewives also have a recipe for preserving garlic scapes.
It differs from the traditional and most common recipe in its set of spices.
To prepare arrows "Korean style" you will need:
- 500 gr. arrows;
- 3-4 cloves of garlic;
- a quarter cup of soy sauce and about the same amount of vegetable oil;
- salt, sugar, and table vinegar (9%), about a large heaped spoon each;
- 4 heaped teaspoons of ground paprika;
- coriander;
- a few black peppercorns;
- a pinch of hot pepper.
Preparation
Garlic shoots need to be prepared for the harvesting process. Wash them thoroughly, peel them, and fry them in a preheated frying pan for about 10 minutes.
After 10 minutes, pour the soy sauce into the pan. Bring everything to a boil.
Add all the spices into the boiling mixture – peppers, garlic, coriander, paprika.
Bring to a boil again.
While the shoots are simmering, sterilize the jars. This recipe is for a liter jar, but if you have several smaller ones, use them.
Place the contents of the pan into sterilized jars and roll up the lids.
Leave the jars to cool in a dark place. Then move them to the pantry.
Another way to prepare garlic shoots for the winter is to make a sauce from them.
Garlic shoot sauce
This is probably the simplest method, especially considering the number of ingredients. There are only three.
To prepare you will need:
- 500 g garlic shoots;
- 100 g of salt;
- ground coriander.
How to cook
Wash the shoots, clean them and put them through a meat grinder or chop them in a food processor.
Add salt and coriander to the crushed mixture. Mix everything thoroughly.
Place the resulting sauce into sterilized jars and close with lids.
Place the jars of sauce in the refrigerator or cellar, somewhere cool.
This sauce can be added to any dish in winter and used for sandwiches, for example, by mixing it with cottage cheese.
