Wash the zucchini and peel it using a peeler. Trim off the ends.
Cut the vegetables crosswise into 7 mm thick circles.

The weight of the finished rings should be approximately 400 grams.
Pour pineapple juice into a saucepan to make syrup.
Add sugar, stir until dissolved.
Add citric acid and bring the syrup to a boil.
Add the prepared zucchini rings. Cook over low heat for 10-15 minutes until the zucchini is tender.
Using a slotted spoon, place the rings into a clean, sterilized jar.
Bring the syrup to a boil again. Pour the boiling syrup over the rings.
Close the jar with an airtight lid, wrap it in a warm blanket and leave overnight until it cools.
The finished preparation can be stored at room temperature in a dry, dark place for up to 3 years.
