Preparing zucchini for vodka
Wash the zucchini, trim off the stems, and peel. You can do this with a slicing knife. Cut the zucchini into large cubes.
Peel the garlic and crush it with a knife/garlic press.
Prepare the marinade: in a separate container, combine water, sunflower oil, garlic, ground pepper, salt, and sugar. Bring to a boil and add vinegar.
Pour the hot marinade over the sliced zucchini, place on the burner and wait until it starts to boil.
After this, cook the vegetables for 15-20 minutes over low heat.
Prepare the containers in which to preserve the zucchini. Half- or one-liter jars are best. Sterilize them using your preferred method: boiling water or steam. Pour boiling water over the airtight lids and leave them for about 10 minutes to steam. Then, spoon the hot, prepared snack into the jars and seal them with the lids. Turn the jars upside down and cover with a warm blanket.
When the preserves have cooled completely, we put them in the basement or a cool pantry.

Absolutely delicious! Thanks for the recipe! A great appetizer, but there's way too much vinegar. You can really taste it on your tongue. If I add less, will it keep for a long time?
