What you'll need for this recipe: zucchini, carrots, onions, a few bell peppers, garlic, seasoning, and a classic set of ingredients and spices for canning—salt, sugar, vegetable oil, and vinegar. It's important to choose the freshest and tastiest vegetables, and it's best to use young zucchini so you don't have to peel or seed them. Young zucchini is ideal for any dish. Ingredients:
- zucchini – 1 kg;
- onion - 250 grams;
- carrots – 500 grams;
- garlic – 100 grams;
- vegetable oil - 100 grams;
- seasoning for Korean carrots – 10 grams;
- salt – 25 grams;
- sugar – 100 grams;
- table vinegar (9%) – 75 grams.
How to cook Korean-style zucchini
Working with zucchini is easy and simple: wash and grate it using a Korean vegetable grater to create fine, attractive shavings. If you don't have a Korean grater, you can either slice the zucchini into thin rounds or thin strips.
Peel the bell pepper and onion and cut the vegetables into strips or half rings.
In a bowl or saucepan, mix the prepared vegetables: zucchini, onion and pepper.
Grate the carrots using a Korean grater, press the garlic through a press, and measure out the required amount of Korean carrot seasoning. It comes in different flavors: spicy and mild, so use whatever suits your taste.
Place all remaining ingredients into a bowl and mix.
Add oil, vinegar, and sugar and salt as directed. Mix thoroughly and press lightly to release the juices. Let sit for 2-3 hours: the vegetables will marinate and become juicy.
