Delicious Georgian cabbage for the winter
If you love savory and delicious appetizers, you'll definitely love Georgian-style cabbage for the winter. It's quick and easy to prepare, and you'll always have this perfect appetizer on hand, perfect for any meal—meat, fish, porridge, potatoes, and more.
The appetizer is slightly sweet, just the right amount of tart, and very tasty. All the ingredients are just right. You can also marinate the cabbage in this way, not just for the winter, but just as is; it keeps in the refrigerator for quite a long time.
For this recipe with step-by-step photos, beets should be sweet and richly colored so that they color the cabbage well.
Ingredients:
- cabbage – 500 g;
- beetroot – 1 pc.;
- garlic – 3 cloves;
- water – 0.5 l;
- vegetable oil – ¼ cup;
- apple cider vinegar – 0.5 cups;
- salt – 1 tbsp;
- sugar – 0.5 cups.
How to cook cabbage in Georgian style
Prepare the ingredients as listed. Immediately place the saucepan on the stove and add water, oil, salt, and sugar. Simmer the marinade for a couple of minutes, then add the vinegar and bring to a boil. While the marinade is cooking, remove the outer leaves of the cabbage, and chop the cabbage into small pieces.
Peel and rinse the beets, cut into random pieces.
Prepare the jar by washing it and sterilizing it using your preferred method. Fill the jar with cabbage and beets, alternating layers. Layer the cabbage with chopped garlic.
Pour boiling marinade over cabbage and beets, then sterilize the mixture for 15 minutes from the moment it boils.
After a while, seal the jar tightly with a sterile lid and turn it upside down, wrap it in a blanket, and leave it alone for 24 hours. Store the cabbage in a cellar or pantry.
Bon appetit!
