Amazing tomato and apple ketchup for the winter
This tomato ketchup for the winter is so delicious, it's practically finger-licking good. It's all thanks to the addition of apples, sweet paprika, and cinnamon. Apples complement tomatoes perfectly – the sauce is thick, sweet and sour, and kids love it. Homemade ketchup contains no harmful additives; it's made without vinegar, and if you've picked it from your own garden, it's a real treasure!
Cooking time is 60 minutes. The ingredients listed in this recipe will yield approximately 1 liter.
Ingredients:
- tomatoes – 1.5 kg;
- apples – 1 kg;
- salt – 30 g;
- granulated sugar – 50 g;
- ground sweet paprika, cinnamon, water.
Making ketchup from tomatoes, apples, and peppers
Wash the tomatoes and remove the stems. Cut the tomatoes into small pieces and place them in a thick-bottomed saucepan.
Wash the apples thoroughly and core them. Chop the fruit finely and add them to the saucepan with the tomatoes.
Pour half a glass of boiling water, cover the saucepan tightly with a lid and place it on the stove, bringing it to a boil over high heat.
Set the timer for 45 minutes, reduce the heat to low, and you can go about your business—the vegetables and fruits will steam without your intervention.
When the ingredients are almost completely cooked, place them in a sieve and strain thoroughly, removing only the unwanted peel and seeds. Apple peels contain pectin, and when a sauce is rich in pectin, it will thicken.
Place the pureed mixture back into the saucepan and place on the fire.
Add white sugar, plain table salt, red paprika, and ground cinnamon. You can add 2 teaspoons of paprika or a little less; 1/2 teaspoon of ground cinnamon is enough.
Bring the sauce to a boil and simmer over low heat for 10 minutes, uncovered. The sauce will splatter a lot as it boils, so be careful.
Place the boiling mixture into prepared sterilized jars. For indoor storage, sterilize 500 ml containers for 15 minutes, and 1 liter containers for 20 minutes.
Storing tomato ketchup in the refrigerator doesn't require additional sterilization. Incidentally, this sauce can be poured into silicone molds and frozen.
