Pumpkin compote tastes like pineapple
Want to surprise your family with a delicious drink? Try making this pineapple-flavored pumpkin compote for the winter. This inexpensive seasonal vegetable produces a large amount of this exotic drink. Pumpkin contains B vitamins, beta-carotene, magnesium, phosphorus, and magnesium. This helps protect cells from environmental influences and prevents cancerous mutations.

Ingredients:
- pumpkin pulp – 1 kg;
- citric acid – 1 pinch;
- sugar – 300 g;
- cinnamon – 1 stick or 0.5 teaspoon;
- water – 2 l.;
- vinegar 9% – 100 ml.
How to make pumpkin compote like pineapple
Peel and seed the pumpkin, and remove the strings. Cut a kilogram of the pulp into equal cubes and place in a deep saucepan.
Dissolve citric acid in water and add cinnamon.
Pour acidified water over the pumpkin and let it stand for 4-6 hours in a cool place.
Place the saucepan over low heat and heat. Add the sugar and wait until it dissolves completely. Then stir gently, being careful not to disturb the pumpkin pieces.
Once the compote boils, simmer for 10-15 minutes. Finally, add the vinegar and cover with a lid.
Wash and sterilize the jars. Pour the compote into the hot, dry jars, making sure the pumpkin fills no more than 1/3 of the jars.
Boil the lids for at least 5 minutes. Remove them from the boiling water and immediately place them on the jars containing the compote. Screw each lid tightly on and turn it upside down. Let the preserves cool slowly, covered with a thick blanket. Turn the jars upside down again and check for bulges or cloudy liquid. If this happens, you'll need to completely re-boil the compote.
Store pumpkin compote out of direct sunlight. After 2-3 months of storage, the pumpkin develops an exotic pineapple flavor. If you choose varieties with light yellow flesh, the pineapple-like flavor will be unmistakable.

Why add vinegar if you've already added citric acid? I doubt it.
