Incredibly delicious cucumber lecho for the winter

Cucumber lecho is an incredibly delicious winter preserve. This lecho can be served as a standalone dish during Lent or included in a vegetarian menu, or added to mashed potatoes for a sophisticated side dish for meat, chicken, or fish.
For this recipe with a photo, you can use small cucumbers with the skin or overripe cucumbers without the skin.
It will take 45 minutes to prepare, and the ingredients listed in the step-by-step recipe will make several 500 ml jars.
Ingredients:
- cucumber – 3 kg;
- tomato – 1.5 kg;
- bell pepper – 1 kg;
- sugar - 150 g;
- salt – 60 g;
- vinegar 9% – 150 ml;
- sunflower oil – 200 ml.
How to make cucumber lecho
Wash small cucumbers thoroughly, trim the ends, and cut the fruit, skin and all, into 3-millimeter-thick slices. Large, overripe cucumbers are also suitable for this recipe, but they will need to be peeled and seeded, and the flesh cut into small cubes.
Place the tomatoes in a pan of boiling water for 1 minute, immediately transfer them to a bowl of ice water, make an incision, remove the skin, and cut out the core.
Finely chop the tomatoes and add them to the pan.
It is best to use red, very ripe tomatoes for this recipe.
Cut the sweet bell peppers in half and remove the seeds. Dice the peppers and add them to the pan.
Add sugar and salt, pour in a tasty vegetable oil (olive, sunflower, or corn). Cover the pan tightly and place it on the stove.
Cook over medium heat for about 40 minutes, then add 9% vinegar 5 minutes before the end of cooking. Bring the lecho and vinegar to a boil and remove from the heat.
We pack the hot vegetables into sterilized dry jars, close them tightly, turn them upside down onto the lids and wrap them in a warm blanket.
Leave it in a warm place overnight, then put it in a cool, dark place.
Such preparations are stored well without sterilization; to be on the safe side, you can sterilize half-liter jars for 10 minutes, and liter jars for 15-18 minutes.
Storage temperature from +2 to +12 degrees Celsius.
