Making Crispy Pickled Cucumbers
The cucumbers should be prepared in advance. Thoroughly wash the cucumbers and soak them for 30-40 minutes. Then sterilize the jars. Place washed currant leaves and dill umbels at the bottom of each jar. Tear the horseradish leaves by hand and arrange the pieces in the jars.
Place the prepared cucumbers in jars. Pack them up to the neck of each jar. Scald the cucumbers with boiling water. Pour the hot water over the cucumbers up to the neck. Leave them for 15-20 minutes. Then drain the water from the jars using a convenient lid. This liquid should not be used further.
Prepare the marinade. Measure out 4.5 liters of water. Add salt and sugar to the pan with the liquid.
Add allspice berries and seasonings. Pour vinegar into the marinade. Bring the marinade to a boil.
Carefully pour the hot marinade over the cucumbers.
Using a seaming machine, seal the lids tightly. Keep the jars upside down and covered for the first 24 hours. Enjoy!
