The simplest ingredients make a very simple marinade. For a delicious result, stick to the recipe, but be sure to taste the finished marinade. Everything can be adjusted as long as the marinade isn't in the jar. You might prefer a sweeter marinade, or, conversely, a more tart one. The amount of salt may also vary. I recommend finding your own "sugar, vinegar, and salt" ratio and sticking to it.
Preparations made according to this recipe can be stored at room temperature, away from heating appliances and central heating radiators.
Preparation time: 30 minutes. Ingredients listed are for one 500 ml jar.
Ingredients for cucumbers:
- gherkins;
- red onion – 1 pc.;
- garlic – 2 cloves;
- dill.
For the marinade:
- water;
- salt – 12 g;
- granulated sugar – 30 g;
- wine vinegar – 20 ml;
- coriander, bay leaf.
How to cook Bulgarian cucumbers
We collect small gherkins, place them in a bowl with cold water for 2-3 hours, then rinse thoroughly under running water.
Place a dill umbrella scalded with boiling water and a head of red onion, cut into pieces, at the bottom of a sterilized jar, add a couple of cloves of peeled garlic.
Place the gherkins tightly into the jar; you can press them down slightly to fit more into the jar.
Boil water, pour it into the jar, immediately pour it into a saucepan, and fill the jar with more boiling water. Let the cucumbers warm in the hot water while we prepare the marinade.
Remove a couple of tablespoons of water from the saucepan (this will be used for the vinegar). Add salt, granulated sugar, and 1 teaspoon of coriander seeds. Add the bay leaf, simmer for 4 minutes, and then pour in the wine vinegar.
Drain the cucumbers. Pour the boiling brine into the jar with the vegetables, close with a clean lid, and pasteurize for 11-13 minutes at 85 degrees Celsius.
Close tightly and store in the pantry.
