Cucumber and garlic dressing for pickle soup for the winter
This recipe for a winter rassolnik dressing made with fresh cucumbers is perfect for home cooks looking to save some time. The idea is to slice cucumbers and marinate them in a delicious brine. Then, during the cold winter months, you can take the pickled cucumbers out of the pantry and add them to soups or salads.
For example, the famous Olivier salad can't exist without pickled cucumbers. But there's not always time to chop them when there are still a huge number of ingredients to chop. This cucumber dressing is especially helpful during the New Year's holidays, when the kitchen is bustling and there's no time to sit down.
In rassolnik soup, add these cucumbers a few minutes before the potatoes are done. The brine can also be used. These cucumbers can also be added to the vinaigrette.
Ingredients:
- cucumbers (peeled and cored) – 0.8 kg,
- onions – 150 g,
- garlic – 3 cloves,
- granulated sugar – 3.5 tbsp.,
- table salt – 1 tbsp.,
- table vinegar – 40 ml,
- vegetable oil – 50 ml.
Preparing dressing for cucumber pickle soup
This preparation can be made even from overripe cucumbers. However, be sure to peel them, cut them in half lengthwise, and scoop out the cores. Cut the cucumbers into cubes.
Peel the onions and cut into small pieces.
Chop the peeled garlic or press it through a garlic press. Then combine all ingredients in a bowl. Mix thoroughly until the salt, vinegar, granulated sugar, and oil are evenly distributed.
Cover the container with cling film or a lid and refrigerate for a couple of hours. You can also let the cucumbers sit there overnight.
Afterwards, we boil the mixture (along with the juice that has been released) for five minutes.
Now we distribute the delicious rassolnik dressing made from fresh cucumbers into sterile containers and seal them. Place the jars upside down to cool, then store them in a pantry or cellar.
