Hunter's salad with cucumbers is simply delicious in winter.
The "Hunter's" cucumber salad is a unique appetizer that not only makes a quick and easy winter snack, but also provides a rich source of vitamins during the winter months.
The recipe doesn't just use cucumbers; it also includes cabbage, carrots, onions, and bell peppers. You'll agree, these vegetables are packed with vitamins, despite being cooked, meaning they're stewed on the stove.
The Hunter's Salad is best served with a meat dish. For example, you could steam chicken breast. If you like grains, use them as a side dish. Boil your favorite buckwheat, rice, or pasta.
This type of preserve should be stored in a cool, preferably dark place. This salad will definitely last all winter, so there's no need to worry about the jar lids popping, even though the preservation process is unsterilized.
Ingredients required:
- large cucumber – 1 pc.
- cabbage – 100 g;
- carrots – 1 pc.;
- onion – 1 pc.;
- bell pepper – 1 pc.;
- tomato – 1 pc.;
- vegetable oil – 50 ml;
- salt – 0.5 tbsp;
- sugar – 0.5 tbsp;
- vinegar 9% - 20 ml.
How to prepare the "Hunter's" salad for the winter
Cut the cabbage into thin strips, peel and slice the carrots. Place the vegetables in a saucepan.
Chop the cucumber, bell pepper, and onion. You can slice the cucumbers or cut them into rings, and chop the other ingredients as you prefer. Arrange the vegetables on top of the cabbage and carrots.
Wash the tomato, cut it into slices, and add it to the previous vegetables.
Pour in vegetable oil.
Then add salt and sugar.
Simmer the vegetables over medium heat for 25-35 minutes. Then add the vinegar and toss the salad.
Put it in jars
Seal them with lids.
