The main ingredient for this preparation, besides the sweet pepper itself, is the tomato—or rather, chopped tomatoes. It's important to choose sweet, juicy tomatoes with thin skins. You can use ready-made tomato juice for this recipe if you prefer. A little crushed garlic adds a piquant flavor.

Ingredients:
- sweet pepper – 5-7 pcs.;
- tomatoes – 350 g;
- garlic – 2 cloves;
- vegetable oil – 3 tbsp;
- vinegar 9% - 1 tbsp;
- salt – 1 tsp;
- sugar – 2 tsp
How to prepare Odessa-style peppers for the winter
Prepare all ingredients according to the list. Select ripe, juicy tomatoes, wash them, and chop them into bite-sized pieces. Transfer the tomatoes to a blender.
At high speed, chop the tomatoes until smooth.
Remove seeds and membranes from the bell peppers, rinse and dry. Cut into strips.
Pour the tomato puree into a saucepan and add the peppers.
Pour in vegetable oil.
Add salt and sugar to the vegetables. Place the pan on the stove and cook the peppers in the tomato sauce for 25-30 minutes.
After the specified time, add chopped garlic and a spoonful of vinegar to the peppers, bring to a boil, and remove from heat.
Place the peppers into sterile jars.
Immediately seal with sterile lids and turn the jars upside down, wrap them in a blanket, and leave them undisturbed for 24 hours. After a while, transfer the jars to the pantry.
