There are many ways to preserve tomatoes for the winter. Let's consider the peeled, canned version, which boasts both simplicity and versatility. Vegetables prepared according to this recipe (with photos) can be served as a side dish or used to make gravy, sauce, or soup.

The cooking time is 60 minutes. The ingredients listed in this recipe will make several half-liter jars.

Ingredients:

  • tomatoes – 3 kg,
  • table salt – 35 g,
  • granulated sugar – 70 g,
  • citric acid – 3 g.

How to preserve peeled tomatoes in their own juice

For this recipe, it is best to use two types of vegetables: large and fleshy ones for juice, and small ones with thin skin for canning.

Let's start by preparing the dressing. Select about 1 kg of tomatoes, wash them, cut them into quarters, and place them in a deep saucepan.

Place the saucepan on the stove, close the lid tightly and steam the tomatoes for 15-20 minutes.

When the vegetables are completely soft, transfer them to a sieve and press them with a spoon. The soft vegetables will almost completely turn into a puree—only the skins and seeds will remain in the sieve.

Add granulated sugar and table salt to the tomato filling and heat until boiling.

Now let's prepare the small fruits for storage. Wash the vegetables thoroughly, place them in a pan of boiling water for a few seconds, then immediately transfer them to a bowl of ice water.

Remove the tomato from the cold water, cut the skin, and peel it easily. Then cut the tomato in half and remove the stems.

We wash the half-liter jars for preparation in a warm solution of baking soda, rinse with clean water and dry in the oven at a temperature of 100 degrees for 10 minutes.

Place the tomatoes cut side down in the cooled jars.

Pour the hot dressing over the tomatoes, then pour the dressing into a saucepan, bring to a boil and add 9% vinegar.

Fill the jars with tomatoes again with boiling liquid and seal.

Place the ingredients in a large saucepan filled with hot water, bring to a boil, and sterilize for 10 minutes.

After cooling, store in a cool place.
