Marinated Tomato Slices in Oil: The Best Recipe
While vegetable and salad preparations are still in full swing, housewives try to diversify their supplies. If you're also a thrifty housewife, here's a recipe to try: tomato slices with onions and oil for winter storage. Our recipe doesn't require sterilization, which makes the process much easier, you'll agree.
It's best to use firm tomatoes for this preparation; cream works perfectly. In addition to the main ingredients, you can add a little garlic, carrots, and peppercorns. Make the marinade slightly sweet for the tomatoes, and the result will be delicious!
Ingredients:
- tomatoes – 250 g,
- onion – 1 pc.,
- garlic – 1 clove,
- peppercorns – 3 pcs.,
- water – 300 ml,
- carrots – 3 pieces,
- salt – 1 tsp (without top),
- sugar – 1 tbsp,
- vinegar 9% - 2 tbsp,
- vegetable oil – 1 tbsp.
How to prepare delicious tomato slices for the winter
So, first, prepare the containers—enough for one half-liter jar. Wash them and sterilize them over steam or in the oven. Wash and dry the tomatoes thoroughly, cut them into wedges, and be sure to remove the stems.
Peel a medium-sized onion, rinse, and dry. Cut the onion into medium-thick half rings.
Place chopped carrots, a couple of onion half-rings, and peppercorns in the bottom of the jar. Also add a peeled garlic clove.
Fill the jar in layers, one after the other: tomatoes, onions, etc. Shake the jar several times during the process so that the tomatoes fit tightly together.
Pour boiling water over the tomatoes, cover with a lid and leave for 15 minutes.
After some time, drain the water into a saucepan, bring to a boil and return it to the jar, again leaving it alone for 15 minutes.
Drain the water back into the pan for the last time, add salt and sugar, simmer for a couple of minutes, and then add vinegar. Return the marinade to the jar with the steamed tomatoes, then add a spoonful of hot vegetable oil.
Immediately seal the jars and check for leaks. Cool the tomatoes upside down, wrapped in a blanket. After 24 hours, you can transfer the preserved tomatoes to the cellar.
