This recipe got its name "Tomatoes Under Snow" because it's prepared with garlic, which actually resembles snow in the jar. The tomatoes have a slightly sweet flavor with a hint of savory. The cooking process itself is so quick that you won't even notice when everything is ready, and step-by-step photos make it even easier.

It's best to choose ripe, firm, and small tomatoes to ensure more room in the jars. Tomato weight may vary depending on their size.

A very important observation and advice: use only home-grown garlic, as the kind sold in supermarkets will immediately turn blue-green in the jars, which won't look like snow at all. However, this won't affect the taste or quality of the winter preserves.

The quantity of ingredients is indicated for a 2-liter jar.

Ingredients:

  • tomatoes - 1300 grams,
  • water - 900 milliliters,
  • garlic - 5 cloves,
  • sugar - 100 grams,
  • vinegar (9%) - 1.5 tbsp.,
  • salt - 25 grams.

How to cook tomatoes under the snow

Rinse the tomatoes thoroughly and pierce them three times with a toothpick where the stems were. These piercings will prevent the tomatoes from cracking when exposed to boiling water.

Sterilize the jars for five minutes each, then boil the lids. Pack the tomatoes tightly into the jars, filling them to the rim. Pour boiling water over them, cover with the lids, and let them sit for 20 minutes.

Peel a medium head of garlic and grate the cloves on a medium grater. This yields approximately 1 heaping tablespoon of grated garlic per jar.

I don't recommend pressing it through a garlic press, as it won't create the snow effect.

Pour the now-warm water from the jars into the sink; you won't need it anymore. Add the grated garlic and vinegar to the tomatoes.

Prepare the marinade with fresh, clean water. Add salt and sugar, bring to a boil, and let simmer for two minutes. Pour this boiling marinade over the tomatoes, filling them to the very top, and screw on the lids. Turn the jars upside down and wrap them in a warm blanket or cover. Leave them there for 24 hours.

Tomatoes covered with snow and garlic are ready for winter. Store in a cellar or pantry.
