Ingredients:

  • tomatoes – 500 g;
  • water – 1.5 cups;
  • salt – 0.5 tbsp;
  • sugar – 1 tbsp;
  • vodka – 1 tsp;
  • vinegar 9% – 1 tsp;
  • garlic – 1-2 cloves;
  • onions – to taste;
  • dill – to taste;
  • peppercorns – 5 pcs.;
  • bay leaf – 1-1.5 pcs.

How to preserve tomatoes with vodka for the winter

Wash and sterilize the jars, and add the necessary spices to the bottom: garlic, dill, peppercorns, and bay leaf. Add some onion slices to taste—they also make a delicious appetizer.

Wash the tomatoes and pack them tightly into the jar. Be careful not to press too hard to prevent them from bursting. Small tomatoes are best for canning – they fit more tightly into the jars and leave much less empty space than larger tomatoes.

Boil water and pour the hot water over the tomatoes. Let them sit for 10-15 minutes. The tomatoes will warm up and become warm and softer. There's no need to sterilize them.

Drain the water into a saucepan, add salt and sugar, stir, and bring back to a boil to create a tomato marinade. Pour in the vinegar and vodka, immediately remove from the heat, and the tomato marinade is ready.
