Tomatoes for the winter in jars, like barrel tomatoes
Here's a simple recipe for pickling tomatoes. Preserving tomatoes for the winter in jars by simply pickling them is very simple, and they taste just like barrel-cured tomatoes—spicy and slightly tart. These vegetables pair well with any meat or fish dishes or side dishes. These tomatoes will also look right at home on a holiday table. Make plenty of this appetizer, because it'll disappear in minutes. And since we'll be jarring the tomatoes instead of pickling them in barrels, it's also very convenient and quick.
List of ingredients:
- tomatoes – 3000 g;
- water – 3000 ml;
- table salt – 2 tbsp./per liter of liquid;
- dill – 5 sprigs;
- garlic – 1 head;
- dried bay leaf – 5 pcs.;
- black peppercorns – 10 pcs.;
- hot pepper – 1 pc.;
- mustard seeds – 2 tsp.
How to prepare tomatoes for the winter, like barrel tomatoes
Wash the jars with baking soda beforehand, then sterilize them and their lids. Next, add the pickling herbs to each jar. You can also add horseradish leaves, cherry or currant leaves, mint, and so on, which will enhance the flavor of the tomatoes. Add the garlic and chopped hot pepper. The spicier you want your tomatoes, the more of these ingredients you should add. Add peppercorns and a pinch of mustard seeds.
Wash the tomatoes and poke holes in each one with a toothpick (to help them marinate better and retain their shape). The type of tomato doesn't matter, just make sure they're firm and undamaged.
We soak the tomatoes twice for a quarter of an hour each time.
Then add the brine. Boil it with water and salt. Boil for about 3 minutes, and finally add the vinegar. Immediately pour it over the tomatoes in the jars.
Roll up. Wrap until completely cool.
