Eggplant and Cucumber Salad – The Best Salad for Winter

Ingredients for eggplant salad:
- 300 g cucumbers;
- 700 g eggplants;
- 150 g onion;
- 700 g tomatoes;
- 300 g sweet pepper;
- 0.5 tablespoons of salt;
- 1 tablespoon of sugar;
- 100 g vegetable oil;
- 35 g 9% vinegar.
Preparing the Eggplant and Cucumber Salad
Peel the onion, rinse it with cold water, then chop it into cubes to use for the salad.
Place the pureed tomatoes in a saucepan and mix with the onion. Simmer over medium heat for 15 minutes.
Wash the eggplants and cucumbers, trim off the ends, and cut into half rings and wedges. Do not peel the vegetables.
Add the eggplants and cucumbers to the onions stewed in tomato sauce and continue to stew everything together.
Immediately pour in vegetable oil to prevent the vegetables from burning to the bottom of the pan and stir.
Season the salad with salt and sugar to balance the flavors of the vegetables. Simmer the eggplant and cucumbers for about 15 minutes.
Remove the seeds from the bell peppers and then cut into medium-sized pieces.
Add pepper to the salad 10 minutes before it’s ready.
Before turning off the heat, add vinegar, let the salad simmer for another 2 minutes, and remove from the heat. Fill the steamed (sterilized) jars with the salad and the juices that formed after simmering the vegetables.
Roll up the lids and leave to cool under a “fur coat” for 3-4 hours.
