The Globe salad is a delicious winter preserve, but its main advantage isn't even the taste, but the fact that this salad never explodes, doesn't require sterilization, and can be stored indoors. It is important to follow the recipe's proportions and cooking sequence, thoroughly wash and sterilize the jars and lids, and wrap the finished salad tightly so that it pasteurizes in a warm place.

It takes 45 minutes to prepare, and the ingredients listed in the recipe make several 450g jars.

Ingredients:

  • tomatoes – 1 kg;
  • bell pepper – 1 kg;
  • onions – 500 g;
  • carrots – 500 g;
  • table salt – 40 g;
  • vegetable oil – 125 ml;
  • apple cider vinegar – 100 ml;
  • granulated sugar - 55 g.

How to prepare Globe salad for the winter

Peel the onion and chop finely. Pour vegetable oil into a deep saucepan, heat gently, and add the chopped onion and half the salt.

Fry the onion over moderate heat for 5 minutes.

Shred the carrots into noodles. A vegetable grater is suitable for this, but you can also grate the carrots on a regular coarse grater.

Throw the chopped carrots into the pan, add the remaining salt and granulated sugar.

Cut the sweet peppers in half, remove the seeds, rinse the peppers under running water, and cut into strips.

Cut out the cores from the tomatoes, chop the tomatoes finely, and add to the other ingredients.

Cover the pan tightly and cook over low heat for 45 minutes. Ten minutes before the end of cooking, pour in the apple cider vinegar, stir, and taste. Add a little sugar if needed.

Boil the vegetables with vinegar for 10 minutes and remove the pan from the stove.

Prepare the jars and lids. Wash the jars, rinse thoroughly with hot water, and dry in the oven at 110 degrees Celsius. Boil the lids.

Place the hot salad in jars up to the shoulders and seal tightly immediately.

Turn the jars upside down, cover with something warm, and leave in a warm place for 8-10 hours or overnight.

Place the cooled jars in a dark, dry place. These preserves can be stored indoors away from heating appliances, for example, in an unheated pantry.
