Cabbage salad with vegetables for the winter

This salad takes very little time to prepare, but it will win you over with its delicate sweet and sour taste and the delicious crunch of the vegetables.
Cabbage is the eternal queen of any feast. And not only at feasts, it pairs beautifully with almost any vegetable, and it's the richness of flavor and the perfect combination of vegetables and spices in this winter preparation that will leave no one indifferent.
The salad can be sealed in jars of different sizes, adjusting the sterilization time.
Ingredients:
- white cabbage (hard winter varieties) - 500 gr.,
- sweet pepper – 2-3 pcs.,
- carrots, medium size – 2 pcs.,
- cucumbers, medium size - 5-6 pcs.,
- sunflower oil - 50 ml,
- salt – 1 tbsp with a small slide,
- sugar – 1 full tbsp.,
- table 9% vinegar – 2 tbsp. (30 ml),
- ground black pepper - to taste.
How to make cabbage salad with vegetables
Prepare clean jars and lids; no need to sterilize.
Wash and dry the vegetables.
We measure and prepare all the necessary spices.
Remove the top leaves from the cabbage and cut into small squares.
Peel the bell pepper and cut it lengthwise into small strips.
I cut the cucumbers lengthwise and then into half rings.
Grate the carrots on a coarse grater.
Add spices – salt, sugar, pepper, pour in vinegar and sunflower oil.
Mix everything thoroughly and, covering with a lid, let it marinate for an hour and release juice.
Next, transfer the salad into prepared jars, compacting them well. Pour the vegetable juice over it.
Cover the jars with lids and place them in a suitable sterilization container. Fill the jars with water up to the shoulders.
Sterilization time after boiling:
- Half-liter – 12 minutes;
- 750 ml – 15 minutes;
- 1 liter – about 20 minutes.
Carefully remove from boiling water and roll up.
Turn the jars over and place them under a “fur coat” until they cool completely.
Store in a cool, dark place.
