Lakomka Salad with Tomatoes, Peppers, and Onions

This "Lakomka" salad of tomatoes, peppers, and onions is prepared with vinegar and sugar, giving this winter preserve a sweet and sour flavor. In winter, simply open the jar, drain the marinade, and season the vegetables with olive oil—a light vegetable appetizer is ready!
The cooking time is 30 minutes. The ingredients listed in the recipe will make several half-liter jars.
Ingredients:
- red tomato – 1 kg;
- bell pepper – 750 g;
- salad onions – 350 g;
For the marinade filling:
- table salt – 20 g;
- granulated sugar – 35 g;
- apple cider vinegar or wine vinegar – 50 ml;
- mustard seeds – 5 g;
- chili pepper – 1 pc.;
- black pepper, bay leaf, fennel;
- filtered water.
How to prepare Lakomka salad for the winter
Let's start by preparing the vegetables: wash them thoroughly, sort them, and remove any signs of spoilage or damage. Only perfectly ripe, slightly underripe vegetables are suitable for this recipe. Overripe tomatoes and peppers can be used to make ketchup and condiments.
So, we clean the bell pepper from seeds and cut it into thin strips.
We also cut the sweet salad onions into small slices or rings, depending on the shape and size of the onions.
Add chopped onion to the pepper.
Cut the tomatoes into slices about a centimeter thick. If the tomatoes are large, cut them into smaller wedges.
Rinse the clean jars with boiling water. Mix the vegetables and pack them tightly into the jars.
Make the marinade. Fill the jars with boiling filtered water and pour it into a saucepan through a perforated lid. Add the sliced chili, mustard seeds, a few bay leaves, a pinch of fennel, and black peppercorns. Add salt and sugar, bring the marinade to a boil, and simmer for 3 minutes.
Pour a tablespoon of wine or apple cider vinegar into each half-liter jar of vegetables, then add the boiling broth with seasonings.
By the way, for flavor, you can add a little allspice and a few cloves to the marinade.
Seal the salad jars with lids and pasteurize at 85 degrees Celsius for 20 minutes. Screw the lids on and turn them upside down.
Store the cooled salad in a cool, dark place. Store at a temperature of 2 to 7 degrees Celsius.
