Salad “Tatar Song”
"Tatar Song" zucchini salad—a winter vegetable preserve with apples. This recipe, complete with step-by-step photos, makes this delicious appetizer easy to prepare.
It is better to prepare vegetables in the fall, when they ripen in the open ground; such vegetable preparations turn out very tasty.
Add chili pepper with caution, be sure to taste it to avoid making the dish too hot.
Cooking time is 90 minutes. The ingredients listed in the recipe will make several 0.5-liter jars.
Ingredients:
- zucchini – 2 kg;
- bell pepper – 150 g;
- apple – 200 g;
- onions – 120 g;
- carrots – 150 g;
- garlic – 3 cloves;
- chili pepper – 1 pc.;
- tomato puree – 85 g;
- ground paprika – 5 g;
- granulated sugar – 180 g;
- apple cider vinegar – 75 ml;
- sunflower oil – 210 ml;
- salt – 50 g.
How to make the "Tatar Song" vegetable salad
Peel and seed the zucchini and cut the flesh into cubes, strips or thin slices.
Place the chopped vegetables into the blender one by one. First, add the onion.
We clean the sweet bell peppers from seeds, wash them, chop them, and add them to the onion.
Wash the carrots thoroughly, scrape, cut into cubes, and throw into a blender.
Peel the apples, remove the core, cut into slices, and add to the other ingredients.
Crush the garlic cloves with a knife and peel them. Cut the chili pepper into rings, seeds included.
Add chili and garlic to a blender and blend the ingredients until smooth.

Pour sunflower oil into a frying pan, add vegetable puree, table salt and granulated sugar.
Next, add tomato puree or tomato paste, sprinkle in ground sweet paprika.
Place the chopped zucchini in the pan, stir, and simmer over moderate heat for about 1 hour.
After an hour, pour in the apple cider vinegar and cook for another 20-30 minutes.
Wash the jars for the salad and dry them in the oven. Place the salad in the jars and wrap them in a warm blanket for 10-12 hours, or sterilize 500g jars for 12 minutes.
