Troika Salad of Eggplant, Peppers, and Tomatoes for the Winter

I'd like to recommend this amazing "Troika" salad made with eggplant, peppers, and tomatoes for the winter. To quickly make a couple of jars, just follow the step-by-step recipe with photos.
It contains three main ingredients: blue eggplant, sweet peppers, and juicy tomatoes. These three vegetables pair perfectly and complement each other, hence the interesting name "Troika."
The salad is prepared quickly, without wasting precious time or money. There's no need to sterilize the prepared appetizer; it keeps very well in a cool, dark place. The only necessary steps are to thoroughly wash and sterilize the jars and steam the airtight lids. This "Troika" appetizer of blue peppers, tomatoes, and onions can be enjoyed as a standalone, complete appetizer. It can also be served alongside other main courses and side dishes.
Ingredients (makes one and a half liters of salad):
- eggplants – 0.7-0.8 kg (about 3 pcs.);
- tomatoes – 0.5 kg;
- bell pepper – 0.6-0.7 kg;
- onions – 0.4-0.5 kg;
- garlic – 3 cloves;
- hot pepper – to taste;
- table salt – ½ tbsp;
- granulated sugar – 1 tbsp;
- table vinegar – 1 tbsp;
- vegetable oil – 100 ml.
How to prepare the Troika salad for the winter
Sprinkle the eggplants, cut into rings, with table salt and leave for 20 minutes so that the fruit releases liquid and, along with it, its bitterness.
In the meantime, we take care of the remaining vegetables: cut the tomatoes into slices.
Bell peppers cut into random slices.
Cut the hot pepper into small pieces.
Cut the peeled onion into half rings.
And crush the garlic using a press.
Next, drain the eggplants and pat them dry with paper towels. Place all ingredients in a large saucepan (leave out the garlic yet).
Let's begin cooking the future salad. Once the mixed vegetables begin to boil, add the chopped garlic, table salt, sugar, and a dash of vinegar. Stir and simmer for half an hour.
Fill sterile jars with Troika salad to the very top and seal with sterile lids.
