The most delicious tomatoes with tomato paste for the winter
Tomatoes are delicious, juicy vegetables, so they're used not only in salads but also in sauces, including tomato paste. If you're looking for an unusual way to preserve these vegetables for the winter, try making tomatoes in tomato paste. Of the many variations, this recipe is the most delicious, and it doesn't require vinegar. These tomatoes are stored the same way as with other methods, in a regular cool pantry or cellar.
In addition to tomatoes and tomato paste, you'll also need a selection of vegetables that will enhance the flavor of the tomatoes and sauce: onions, carrots, and bell peppers. These vegetables can even be eaten after the tomatoes in the jar are gone. It makes a great appetizer.
Ingredients:
- tomatoes – 1 kg;
- tomato paste – 120 g;
- water – 1 l;
- salt – 5-7 g;
- sugar – 15 g;
- sweet pepper – 0.5 pcs.;
- onions – 0.5 pcs.;
- carrots – to taste;
- garlic – 1-2 cloves;
- allspice peas – 3-4 pcs.;
- dill – 1-2 sprigs;
- bay leaf 1-2 pcs.
How to prepare tomatoes in tomato paste
Wash and sterilize glass jars. Each homemaker chooses their own method. You can sterilize over steam, in the oven, or in a regular microwave.
Place spices and vegetables in the bottom of the prepared jars. For the spices, add peppercorns, bay leaf, garlic, and dill. For the vegetables, add a piece of bell pepper, a few slices of carrot, and onion.
Wash the tomatoes (it is better to use small tomatoes, they fit better in jars) and place them in the jars on top of the spices and vegetables.
Bring water to a boil for the marinade and pour boiling water over the tomatoes. Cover and let sit for 15 minutes.
Drain the liquid into a saucepan, bring to a boil again, add salt, sugar, and tomato paste. Let the marinade simmer for a couple of minutes.
Pour hot tomato marinade over the tomatoes.
Roll up the lids tightly and wrap them in a "fur coat." Leave the delicious and aromatic tomatoes in tomato paste without vinegar to cool overnight. Enjoy!
