The fall berry season has begun, and the damsons are already ripe in the garden. Every year I make a compote from them for the winter, and this year I didn't change the tradition. I want to share with you the simplest recipe for compote from this berry, enough for a 3-liter jar.
Because the skins of blackthorns are very thin, they crack immediately when hot water is added, but this doesn't affect the flavor of the compote. The drink has a very rich flavor and a pleasant tartness.
Ingredients for a 3-liter jar of compote:
- blackthorns – 600 g;
- sugar – 400 g.
How to prepare blackthorn compote for the winter
Carefully sort the berries, removing any that are too soft or spoiled. Measure out the required amount of ingredients.
Rinse the blackthorn thoroughly under cold running water.
Place the blackthorn in a sterilized 3-liter jar.
Pour sugar into the jar.
Then pour boiling water over the berries.
While the compote is still hot, close the jar with a lid and seal. Be sure to check the jar for leaks and, turning it upside down, wrap it in a warm blanket for half a day.
After the jar of compote has stood for several days, its color will become more intense.
Compote prepared this way keeps well in a cellar or at room temperature. However, in the latter case, it's best to keep the jar away from sunlight.
