Preparations for the winter

Many of us preserve various fruits and vegetables in jars all summer long, because in winter we sometimes really want to treat ourselves to something tasty.

Beets are one of my favorite vegetables, and I also preserve them in jars for the winter. My whole family loves beetroot caviar, made from boiled beets, and today I'll share my recipe with you.

This dish will add a wonderful touch of variety to your table during the colder months, when you're especially craving something tart and spicy. Beetroot caviar will delight you with just that flavor. This vegetable is perfect for those on a diet or observing Lent.

Besides being delicious, beets are also incredibly healthy. Besides containing a huge amount of vitamins, they're also excellent at cleansing the intestines of toxins and improving digestion.

Beetroot caviar is a wonderful cold appetizer that can be served with any side dish; it's never a bad addition to your diet. It's just as delicious as the one you got in kindergarten. You can also use it as a dressing for borscht or even just spread it on bread—either way, you'll be satisfied.

To make truly delicious caviar, I recommend using small or medium-sized root vegetables, as they will be much tastier and juicier than larger ones. The photos in the recipe will show you the step-by-step preparation process.

Ingredients:

  • boiled beets – 250 grams;
  • carrots – 125 grams;
  • onion – 125 grams;
  • tomato paste – 30 grams;
  • vinegar – 10 milliliters;
  • salt – to taste;
  • sugar – ½ tbsp;
  • vegetable oil – 2 tablespoons;
  • garlic – 1 small clove;
  • allspice;
  • bay leaf;
  • dill.

How to make beetroot caviar

First, fry the carrots and onions in vegetable oil. When they become slightly translucent, add the tomato paste and bring the mixture to a boil.

Next, add the grated beetroot, vinegar, and all the spices. Stir and simmer over low heat for 15-20 minutes.

Place the hot, even still boiling, caviar into a glass jar and roll up the lid.

Place the inverted jar in a cool place, wrapped in something warm.
