Pumpkin juice with apples - a recipe for the winter

The simplest pumpkin juice with apples is actually made from three ingredients, with the addition of lemon juice. So, even when preparing this seemingly simple drink for the winter, it's important to understand the theory! We'll explain the best way to juice pumpkin and apples at home, how to preserve this aromatic mixture until winter, and at what stage to add lemon juice.
Ingredients:
- apples – 2 kg;
- pumpkin – 2 kg;
- lemon – ½ pc.
How to prepare pumpkin juice with apples for the winter
In addition to the ingredients themselves, you will need an electric juicer, a saucepan for boiling the juice, glass jars with screw-on lids, and a funnel or mug with a spout for carefully pouring the drink into the jars.
Which apples should you choose for making this juice? Green or yellow-skinned varieties are best. Of course, the fruit should be juicy and not wilted. A good choice would be the "Snow Calville" variety, as used in our recipe.
As for the pumpkin, this vegetable should be round (oblong pumpkins are better suited for making creamy soups and other non-sweet dishes), and its flesh should be bright and dripping when cut.
Assemble the juicer from the parts, making sure to place a container under the spout to collect the juice. Wash the apples thoroughly and add several whole ones to the fruit compartment. If you have a smaller juicer that isn't designed for processing whole apples, cut each fruit into quarters and fill the compartment with these quarters. After turning on the machine, you'll see the pulp (seeds, peels, and cores) fall into the large waste compartment, and the juice flows from the spout into a cup or saucepan.
Pour the apple juice into a saucepan and prepare the second ingredient for the drink—the pumpkin. To do this, wash the pumpkin, peel it with a knife, and cut the flesh into large cubes.
Pass the pumpkin pieces through a juicer.
Pour the resulting juice into the saucepan with the apple juice. Stir with a spoon.
Juice half a lemon (you can do this by hand or with a citrus press) and add it to the apple-pumpkin mixture. In this recipe, the lemon juice will serve as a preservative, as you're preserving the juice for the winter and want it to last.
Place the juice in a saucepan over low heat, bring to a boil, and simmer for 5 minutes. Once boiling, carefully skim off any foam that rises above the juice with a slotted spoon. Meanwhile, sterilize the jars and lids by boiling them in a saucepan of water for 10 minutes.
Pour the hot juice into jars using a mug or funnel and a strainer and immediately seal the containers with lids.
Let the jars of juice cool on the table in an inverted position, and then they can be moved to a permanent storage location.
