I suggest making a simply mind-blowing winter salad with zucchini, tomatoes, and bell peppers. Honestly, the salad is so delicious, you can easily make a double batch. Below is the amount of ingredients for one half-liter jar, but you can safely increase the proportions to the amount you need.
This delicious zucchini salad is best served with a side dish. I most often make pilaf with meat. In my opinion, zucchini salad pairs perfectly with it. If you don't like rice, you can boil some potatoes and mash them, then add warm milk. This will make mashed potatoes, which can also be easily served with the zucchini salad. This salad also pairs perfectly with baked meat or boiled eggs, and as a standalone appetizer, "with porridge," which is so beloved by the male half of society, it's simply irreplaceable.
Ingredients required:
- zucchini – 2 pcs.;
- tomato – 1 pc.;
- garlic – 1 clove;
- bell pepper – 1 pc.;
- salt – ¼ teaspoon;
- sugar – ¼ teaspoon;
- vegetable oil – 50 ml;
- vinegar – 20 ml.
How to prepare a delicious zucchini salad for the winter
Wash the zucchini and cut it into medium-sized cubes. If your zucchini is not very young, be sure to peel it.
Wash the tomato and pepper as well. Cut the tomato into wedges and the pepper into small cubes.
Place the chopped vegetables and a clove of peeled garlic in a double-bottomed saucepan.
Add salt and sugar.
Pour in the vegetable oil. Place the saucepan over low heat and simmer the salad for 30 minutes.
After this, slowly and very carefully place the salad into a glass jar.
Seal the jar tightly. Store this delicious zucchini, tomato, and bell pepper salad in a pantry or cellar if you live indoors and have one.
