A universal winter dressing without cooking
To save time, you can make special vegetable preserves. They can be used in salads, entrees, stews, and side dishes, or simply eaten with meat or fish dishes. This no-cook winter soup dressing is a versatile recipe; you can prepare this vegetable platter in minutes. There's no need for sterilization or cooking, and the ingredients are simple and accessible to everyone. The absence of table vinegar makes this preparation completely safe and very healthy. Now you'll always have fresh vegetables in your diet, despite the cold winter outside.
Yield of finished dressing = one and a half liters.
Ingredients for dressing:
- tomatoes – 0.5 kg;
- sweet pepper – 0.5 kg;
- carrots – 0.5 kg;
- parsley – 150 g;
- dill - to taste;
- salt – 400 g.
Preparing soup dressing
Wash all the vegetables and cut them into medium-sized slices.
Grate the carrots on a coarse grater.
Cut the sweet bell pepper into thin slices.
Chop the dill and parsley.
Mix all the prepared ingredients in one bowl and sprinkle with table salt. You'll need a full 0.4 kg of salt, as it will act as a preservative for this preparation.
Let the fruit sit for half an hour to absorb the salt, release liquid, and shrink slightly. After a while, pour the vegetable dressing into washed and dried jars. Pack them tightly to remove as much air as possible.
We close them with nylon lids or metal ones with threads.
Store the dressing in the refrigerator for up to one year. Add the vegetables a few minutes before they're ready. This versatile dressing goes well with any dish. Feel free to modify the recipe to suit your tastes. For example, you can omit the dill or add a little cabbage. Just remember, the dressing is already quite salty!
