Homemade apple cider vinegar
I'd like to share a simple recipe with you and tell you how to make apple cider vinegar at home. This product should be in every home kitchen. Its properties are much better than regular table vinegar.
It's not at all aggressive; on the contrary, it's beneficial, and very aromatic. It contains many amino acids and vitamins. It can be used to make various winter preserves, sauces, salad dressings, and more. However, apple cider vinegar is more expensive than regular table vinegar in stores. Furthermore, many of its beneficial properties are lost during the manufacturing process. Therefore, you can make this vinegar at home without much effort or expense. And you'll have no doubts about the naturalness of the resulting product.
Ingredients:
- apples (grated) - jar, 1000 ml;
- water – 1000 ml;
- granulated sugar – 100 g;
- yeast (pressed) – 20 g.
How to make apple cider vinegar
The first question that may arise is: "Which apples are best for making vinegar?" Avoid large, pretty apples. You can make something else with them. Any fruit, even those with blemishes or damage, can be used for vinegar. The main thing is to trim off any imperfections. Cut each apple into several slices; you don't need to remove the core.
Next, grate the fruit on a grater (coarse).
Pour 1000 ml of room-temperature water into a three-liter jar. Add 20 g of pressed yeast and 100 g of sugar. Stir.
Then add the mashed apples. Mix everything together with a wooden spoon.
Let it ferment for ten days in a dark place. There's no need to cover the jar with a lid. Also, remember to stir your future apple cider vinegar daily, stirring it 2 or 3 times a day.
After the time has elapsed, strain the vinegar through cheesecloth or a sieve into a clean jar. Squeeze the applesauce thoroughly.
We leave the vinegar, covering the jar with cheesecloth, to ferment for about 60 more days. It will clear up, and all the sediment will settle to the bottom.
When the apple cider vinegar (5-6%) is ready, distribute it into glass bottles and screw on the caps.
