Delicious fried zucchini in tomato sauce for the winter

This appetizer will appeal to all zucchini lovers and beyond. It's perfect for any occasion: from a simple family dinner to a festive feast. Fried zucchini in tomato sauce is incredibly delicious, and the sweet peppers add a unique twist. This winter preparation will delight you all year round, as it keeps well and for a long time. Roasting the zucchini makes it very tender and savory. It goes well with any side dishes, including meat, poultry, and fish. Zucchini can be served as a standalone appetizer, or it can be a great snack if you haven't had time to prepare anything else.
The amount of ingredients given in the recipe makes 4 jars of 0.5 liters each.
Ingredients:
- 1000 g zucchini,
- 350 g bell pepper,
- 50 g of onions,
- 900 g tomatoes,
- half a bunch of parsley and dill,
- 1 tbsp. salt,
- 2 tbsp. sugar,
- 7-9 cloves of garlic,
- 100 ml vegetable oil,
- 6-8 black and allspice peas in each jar.
How to cook zucchini in tomato sauce
Select young zucchini, wash them, and cut into 10mm thick rings.
Peel and chop the onion. Cut the tomatoes into medium-sized pieces.
Cut the sweet peppers into small slices.
Heat vegetable oil in a frying pan. Fry the sliced zucchini until golden brown.
Fry the onion in a frying pan until it begins to turn translucent. Add the chopped tomatoes and fry everything together for about five minutes.
Blend the tomatoes and onions. Add sugar, salt, oil, and chopped herbs to the tomato dressing.
Place the peppercorns in the bottom of a sterile jar, then layer all the vegetables in balls, mixed with tomato sauce (use the bell peppers raw). Then pasteurize the mixture for an hour and a half.
At the end, we seal the jars and put them into storage.
