Sea buckthorn jelly for the winter without cooking
Sea buckthorn jelly is a healthy, live jam made from sea buckthorn berries, which contain many organic acids and vitamins. It's no wonder these berries are called a multivitamin concentrate. The fruits also contain serotonin, which plays a vital role in the normal functioning of the nervous system. Among other things, this berry is beneficial for the elderly for the prevention and treatment of atherosclerosis and age-related changes. To maximize the beneficial properties of the fruit, use this recipe for preserving it for the winter without cooking the berries. Sea buckthorn jelly prepared this way should be refrigerated.
The cooking time is 20 minutes. The ingredients listed in this recipe will make two 350g jars.
Ingredients:
- sea buckthorn – 1 l;
- granulated sugar – 1 kg.
How to make sea buckthorn jelly
Sort the sea buckthorn berries. Discard any dried or spoiled ones, keeping only the firm and dry ones. Place the berries in a bowl or basin, fill with cold water, and skim off any debris that floats to the surface. Rinse the berries in a colander and drain on paper towels.
Place the dried sea buckthorn berries in a bowl and sprinkle with granulated sugar. Alternatively, you can simply sprinkle the berries with sugar in a 1:1 ratio and store in the refrigerator.
Take a wooden pestle or potato masher and carefully crush the sea buckthorn to release the juice.
You can also put the fruits through a meat grinder or chop them in a blender.
Mix thoroughly and leave for a while for the granulated sugar to melt.
Take a fine-mesh sieve, dip it in boiling water for a minute, and also pour boiling water over a spoon.
Place the mashed berries with syrup in a sieve and rub with a spoon into a clean and dry bowl.
Thoroughly wash the jelly jars and lids with warm water and dishwashing liquid or baking soda, then rinse with boiling water. Dry the jars in a preheated oven at 120 degrees Celsius for several minutes.
Pour the jelly into clean and dry jars, screw them tightly, and put them in the refrigerator.
The best storage temperature is between 0 and -4 degrees Celsius. The product's flavor and nutritional qualities will be preserved for 3-4 months.
