Delicious instant soup – just 25 minutes
Hot, fresh soup is a favorite dish in many families. But often, cooks cook it in meat broth, which is time-consuming.We suggest you make a delicious, quick soup that's ready in just 25 minutes. Instead of meat, we'll use dairy sausages, a favorite of everyone. This recipe also includes potatoes, vermicelli, and canned green peas. We'll also use onions and carrots for a vegetable stir-fry.

Ingredients for 1.8 liters of water:
- medium-sized potatoes – 2 pcs.;
- milk sausages – 180-200 g;
- onion – 1 pc.;
- carrot – 1 pc.;
- vegetable oil – 2 tablespoons;
- thin vermicelli - 2-3 tablespoons;
- canned green peas – 2-3 tablespoons;
- fresh herbs – to taste;
- salt, pepper – to taste.
How to make soup in 25 minutes
Peel and dice the potatoes. Place them in a saucepan with water and bring to a boil over medium heat. Once the potatoes come to a boil, reduce the heat to low, cover the pan slightly, and simmer for 10-15 minutes until soft. Diced potatoes cook very quickly. Add a little salt to the soup.
While the potatoes are boiling, chop the vegetables: peel and rinse the onion and carrot. Chop the onion into small cubes, and grate the carrots, if possible.
Fry the onion and carrot in oil until translucent, then add the sliced sausages. Dairy sausages work well in this soup, but lightly smoked ones are also suitable. Fry the vegetables and sausages for a couple of minutes and immediately turn off the heat.
Add the sautéed vegetables and sausages to the soup and bring to a boil.
Immediately add the vermicelli and cook for 5-7 minutes.
Drain the peas and add them to the soup. Bring to a boil again, taste, and add a little pepper if needed.
Bring the soup to a boil, stir, and add finely chopped herbs. Dill is ideal for this.
