Delicious Georgian-Style Eggplants – A Quick and Easy Recipe

Everyone will love this Georgian-style eggplant. They're spicy and piquant, thanks to the hot peppers and garlic. This appetizer is perfect for any occasion: be it a holiday or just a family dinner. These eggplants are a perfect appetizer on their own, but they can also be served with meat, potatoes, and other side dishes.
Ingredients:
- eggplants – 2 pcs.;
- table salt – 1 tsp;
- garlic – 3-4 cloves;
- hot pepper (capsicum) – 1/3 part;
- vegetable oil – for frying eggplants + 1 tbsp for dressing;
- table vinegar - 1 tbsp;
- parsley/cilantro – 1/2 bunch.
How to cook quick Georgian-style eggplants
First, prepare the eggplants: wash them, cut off the stems, and slice them into 20mm thick rounds. Avoid slicing them too thinly, as this will prevent them from holding their shape.
Place the sliced eggplants in a suitable container and sprinkle generously with table salt. Let them sit for 30 minutes. This will allow the vegetables to release their juices and release any bitterness.
After this, drain all the liquid and pat the eggplants dry with a paper towel. Next, fry them in hot, odorless vegetable oil. Don't fry all the vegetables at once. Fry in small batches, ensuring each eggplant slice is cooked through on both sides. To remove excess oil from the vegetables, pat them dry with a paper towel.
Let's prepare the dressing for our appetizer: mince the garlic and chilli, chop the herbs, and add a tablespoon of oil and vinegar. Now whisk the dressing lightly with a fork.
