Oven-baked eggplant with meat – interesting spice combinations
I offer you a step-by-step recipe with photos for a delicious main course made from simple and affordable ingredients. Almost all eggplant and meat recipes are prepared very quickly and turn out very tasty, and this dish is no exception.
This recipe calls for a sauce made from tomatoes, bell peppers, and tomato puree. However, if you don't have time to prepare it, you can substitute it with thick ketchup with vegetable pieces; it will also be delicious.
To cook eggplant with meat, cheese, and garlic in the oven, we need 60 minutes. The ingredients listed in the recipe make 5-6 servings.
Ingredients:
- eggplant – 2 pcs.;
- ground beef – 380 g;
- bell pepper – 80 g;
- tomato – 150 g;
- tomato puree – 200 g;
- onions – 210 g;
- oregano – 1 teaspoon;
- mint, parsley, cilantro;
- hard cheese – 30 g;
- garlic – 2 cloves;
- vegetable oil, black pepper, sugar and salt.
How to cook eggplant with meat and cheese in the oven
Cut ripe eggplants with firm, dark purple skin into round slices, sprinkle with a pinch of salt and leave for 20 minutes.
Season the cooled ground beef with salt. This dish can be made with any meat, but beef tastes best.
Peel the onion and chop finely. Separate half of the chopped onion and add it to the bowl with the ground meat.
Add oregano and thoroughly mix the meat with spices and chopped onion.
Grease an ovenproof dish with vegetable oil. Place a portion of the minced meat on one eggplant slice, then another eggplant slice, and then more minced meat. Fill the entire dish this way.
Fry the onion in vegetable oil until translucent. Add the diced tomatoes and bell pepper.
Fry the vegetables over moderate heat for 5 minutes.
Add the tomato puree to the pan and simmer for 10 minutes. At this point, you can puree the finished sauce in a blender to create a smooth puree.
Finely chop the cilantro, parsley and mint, mix with the vegetable sauce, add salt to taste, a pinch of sugar, and pour the sauce into the pan.
Preheat the oven to 180 degrees Celsius. Sprinkle the dish with grated cheese mixed with garlic, place the pan in the preheated oven, and cook for 40 minutes.
Before serving, garnish with fresh herbs and season with freshly ground black pepper.
