The Mazurka cake with dried fruits and nuts has a very bright and incredibly rich taste.

This is an easy-to-make, delicious sponge cake filled almost entirely with a mixture of candied fruit, nuts, and dried fruits, just like Christmas cake. Unlike Christmas cake, this recipe is much simpler, but just as delicious!

It takes 50 minutes to prepare, and the ingredients listed in the step-by-step recipe with photos will make 6-8 servings.

Ingredients:

  • chicken eggs – 2 pcs.;
  • granulated sugar – 6 tablespoons;
  • wheat flour – 6 tablespoons;
  • baking powder – 1 teaspoon;
  • a pinch of salt, butter for greasing the pan.

 

How to make a Mazurka cake

Crack two fresh chicken eggs into a deep bowl. If the eggs are small, it's better to use three instead of two.

Add granulated sugar and a pinch of fine salt to balance the sweetness of the dough. Beat the eggs and sugar until thick and fluffy.

Measure out the required amount of wheat flour and add baking powder. Sift the flour and baking powder through a sieve, then fold the flour into the egg-sugar mixture a little at a time, kneading the dough with gentle, even movements.

Take a mixture of nuts, dried fruits, and candied fruits. If necessary, chop larger ingredients of this mixture (large candied fruits, nuts, or whole figs) into smaller pieces. Add the sweets to the bowl with the dough, and mix gently.

Grease the pan with butter, sprinkle with wheat flour, and pour in the dough.

Preheat the oven to 185 degrees Celsius. Place the pan in the preheated oven and bake for 10 minutes at 185 degrees Celsius, then reduce the heat to 160 degrees Celsius.

Bake at 160 degrees for another half hour, remove the pan from the oven, and cool the baked goods on a wire rack.

Cut into portions and serve with tea or coffee. You can dust the cake with powdered sugar mixed with ground cinnamon or drizzle it with a simple glaze of powdered sugar and lemon juice. If this dessert isn't for children, soak it in cognac or rum—it'll be delicious. Enjoy.
