Cabbage cutlets are the most delicious option
Cabbage cutlets certainly won't replace meat cutlets, but for variety in your diet or when you don't have any meat, these recipes are a great choice. Cabbage cutlets can be prepared lean or with the addition of eggs, sour cream, mayonnaise, cheese, or cottage cheese. They can be baked in the oven, fried in a pan, or cooked in a steamer.
In the recipe below, cabbage cutlets are prepared without meat, but an egg is added to the vegetable mixture. If you'd like to make them leaner, omit the egg and substitute a tablespoon of semolina. Blanch the cabbage for a few minutes beforehand—this will soften it and remove the distinctive cabbage flavor. Add spices to your liking. You can use a ready-made spice mix for vegetable dishes or add a little pepper, aromatic herbs, chili, or paprika—experiment and find your own, most delicious option.
Ingredients:
- white cabbage – 350 g;
- wheat flour – 3 tbsp;
- egg – 1 pc;
- salt – to taste;
- onions – 1 large head;
- vegetable oil – 3 tbsp;
- dried Provencal herbs – 0.5 tsp;
- ground black pepper – to taste;
- chili or paprika – 2-3 pinches.
How to make cabbage cutlets without meat
While the water for blanching the cabbage is boiling, prepare the vegetables. Finely chop the onion. Shred the cabbage into thin, short strips.
Add the cabbage to the boiling water, reduce the heat, and let it simmer for five minutes. The cabbage should be tender, but don't overcook it.
Drain the water through a colander or sieve and let the cabbage cool so you can squeeze it without burning yourself. Alternatively, rinse it with cold water and then squeeze it.
Heat a tablespoon of oil in a frying pan. Add the diced onion and sauté until lightly browned.
Place the squeezed cabbage in a bowl, add the fried onions and beaten egg. Mix.
Add flour, salt to taste, spices according to the recipe or add spices of your choice.
Mix all ingredients thoroughly. The mixture should be sticky and not crumble into small pieces. If it does, add more flour.
Wet your hands with cold water and form small, flat, round patties. Place them in a hot frying pan with oil and fry over low heat for about three minutes on each side.
Serve the cabbage cutlets with any side dish or fresh vegetables, tomato sauce, or sour cream. Enjoy!
