How to make delicious pickled honey mushrooms at home

Forest or meadow honey mushrooms are excellent for pickling. It's important to choose them wisely. Forest honey mushrooms are not brightly colored, but have a slightly dusty hue. If you're offered reddish-brown mushrooms, these are their Chinese counterparts, grown in artificial conditions. They won't cause any harm, nor will they provide any benefit. The main distinguishing feature of edible honey mushrooms is the presence of a rim on the stem. Depending on the region where they grow, forest honey mushrooms may have a gray spot on their caps.
When pickling meadow honey mushrooms, only the caps are used, while forest mushrooms can be cooked whole.
You will need:
- honey mushrooms – 300 grams;
- garlic – 1 clove;
- bay leaf – 1 piece;
- cloves – 3 buds;
- apple cider vinegar – 1 tablespoon;
- olive oil – 1 tablespoon;
- salt, pepper.
How to pickle honey mushrooms at home
Soak the mushrooms in cold water for 10 minutes. Clean if necessary.
Rinse the honey mushrooms in a colander under running water.
Cover the mushrooms with cold water, add a little salt, and cook for 5 minutes. Drain, rinse, cover with fresh water, and cook for 20 minutes.
At the end of cooking, add bay leaf and cloves.
Strain the honey mushrooms. Don't discard the broth; use it to make soups or Lenten borscht.
Place the mushrooms in a salad bowl, preferably a ceramic one.
Add grated garlic.
Pour in vinegar, stir and leave for 30 minutes at room temperature.
