How to make pumpkin marmalade
Peel the orange pumpkin. Use a tablespoon to scoop out the seeds and soft flesh. Finely chop the firm flesh—grate it on a coarse grater or cut into small cubes.
Place the chopped pumpkin in a saucepan and pour a little hot water into the bottom. Use very little water—no more than 50 ml—to prevent the vegetables from burning during the initial cooking process, before the juices begin to release.
Place the pan on the stove, cover with a lid, and simmer over low heat for 30 minutes. You want the pumpkin to soften completely, so the cooking time will vary depending on the variety.
Next, press the cooked pumpkin through a sieve to remove any stray seeds and peel. If you're sure there are no foreign particles, puree the vegetables in a blender.
Next, add granulated sugar to the pumpkin puree, squeeze the juice from half a lemon, and mix.
Place the saucepan back on the stove and simmer the puree until it thickens—the mixture will easily separate from the sides of the pan when stirred. This will take approximately 30-40 minutes.
We transfer the boiled puree into dry sterilized jars or place it on a baking sheet lined with parchment paper in a layer of about 2 centimeters.
Let the marmalade sit at room temperature for about a day, or longer if desired. Then cut into portions and sprinkle with fine-grained sugar or powdered sugar, if desired.
Bon appetit.
