How to bake blueberry pie

Before making the dough, prepare the butter: remove it from the refrigerator and let it sit in a warm place for at least half an hour. This will soften the butter and make it more tender and pliable—exactly what you need for the most delicious dough. Transfer the softened butter to a large bowl (the one you'll be using to mix the dough), add the sugar, and mix with a fork or whisk until smooth.

mix butter with sugar

Don't swap the fork for a spoon just yet; you'll need it later when you add the eggs. So, crack one egg into the butter mixture and use a fork to mix it into a smooth mixture.

add an egg

Add the remaining eggs one by one and mix the mixture with a fork until smooth.

add the remaining eggs one at a time

Salt the mixture and add flour.

add flour

Immediately stir the baking powder into the unmixed flour and add the frozen berries. Don't defrost the blueberries first, as they'll become soft and crumble when mixed in.

add frozen berries

Therefore, add frozen berries to the dough and immediately knead the dough with a spoon. A clever trick to use at this stage is to add the berries directly to the flour mound, simultaneously dusting them with flour as you knead. This will prevent the berries from sinking to the bottom of the pie during baking, but instead ensure they're evenly distributed throughout the dough.

mix blueberries into the dough

Grease a rimmed baking pan with a knob of butter, coating both the bottom and the edges. Then dust the pan with a little flour, shaking off any excess.

grease the pan with butter and sprinkle with flour

Transfer the prepared batter with frozen blueberries to a baking dish and smooth it out with a spoon. When uncooked, this batter is thick but not runny.

put the dough into the pan

In the oven, the heat will first liquefy it (the butter will completely melt) and then set. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit) and place the pan with the dough in it. Bake the pie for half an hour. If the topping is golden brown and has tanned to a beautiful bronze color, the pie is ready!
