Quick Korean-Style Tomatoes in a Jar
Increasingly, among the culinary abundance, you can find savory, quick-to-prepare snacks that aren't all that difficult to prepare. First and foremost, these are Korean vegetables. Most commonly, carrots, tomatoes, cauliflower, or cucumbers are pickled. Today, we'll take ripe red tomatoes and prepare them Korean-style in a jar in just 24 hours. You can use any variety of tomatoes for this appetizer, as long as they're ripe and not green inside. Hard, unripe tomatoes don't pickle well, or rather, slowly, so we use tasty, outdoor tomatoes, which have the best flavor, unlike their greenhouse counterparts.
The day before the holiday feast, be sure to marinate the tomatoes in a jar and serve them to all your guests within 24 hours. Before you know it, the appetizer will be gone, so consider making a double batch of tomatoes right away—they're so delicious and savory.
Once you've found the recipe and proportions to your liking, you can replace the tomatoes with cucumbers or zucchini, which also pickle quickly, resulting in the best appetizer imaginable.
Ingredients:
- red tomatoes – 500 grams;
- sweet pepper – 1 pc.;
- chili pepper – 0.5 pcs.;
- garlic – 3 cloves;
- sugar – 20 grams;
- salt – 0.5 tbsp;
- odorless vegetable oil – 25 grams;
- apple cider vinegar – 30 grams.
How to cook Korean-style tomatoes in a jar
Wash all the tomatoes and cut them into large slices, immediately cutting out the stems.
For the marinade, chop the vegetables and add salt, sugar, and vegetable oil. We used sweet and hot peppers, as well as garlic. These can be easily chopped in a blender or a meat grinder. Mix the resulting mixture.
Add apple cider vinegar to the vegetable dressing to speed up the marinating process.
We begin to place the tomatoes (some of them) in a dry, clean glass jar.
Place the marinade between the tomatoes, trying to pour as much of it on the tomatoes as possible.
