Simple Vegetable Casserole - An Easy, Delicious Recipe
A simple vegetable casserole is the perfect option for a healthy lunch or a filling dinner. Vegetables delight us with their abundance during the summer, but when winter arrives, the market becomes scarce, and we have to make do with what we have. Today we suggest you prepare a casserole of potatoes, tomatoes, onions, and mushrooms, and add some hard cheese and sour cream.
This step-by-step recipe with photos makes a delicious casserole. Serve it with a variety of meats or poultry, or simply with vegetables or pickles. If desired, you can make the dish more interesting by adding spices and herbs to taste.
Ingredients:
- potatoes – 250 g;
- onion – 1 pc.;
- tomatoes – 1 pc.;
- champignons – 150 g;
- sour cream – 3 tbsp;
- dry garlic – 2 tsp;
- hard cheese – 120 g;
- vegetable oil – 2 tbsp;
- salt, pepper – to taste.
How to make a simple vegetable casserole
Prepare all the necessary ingredients according to the list. Peel and wash the potatoes and onions. Rinse and dry the tomatoes. Wash the mushrooms thoroughly as well. Preheat the oven immediately to 180 degrees Celsius.
Choose any baking dish you'll use for the casserole. Grease the dish with vegetable oil. Slice the potatoes and arrange them in the first layer.
Place onions, cut into half rings or strips, on top of the potatoes.
Slice the mushrooms and arrange them on top of the onions. Season all ingredients with salt, pepper, and any other spices you like, and add a couple of pinches of dried garlic.
Cut the tomatoes into slices and place on top of the mushrooms.
Brush the tomatoes with sour cream and sprinkle generously with dried garlic.
Grate hard cheese on a coarse grater, sprinkle the tomatoes with cheese shavings.
Seal the pan with foil and bake in the oven for 25 minutes. Serve after 25 minutes.
