Apple croissants made from cottage cheese dough
Soft, tender cottage cheese dough and cinnamon-scented apples—the perfect combination for homemade baking! These apple croissants are a joy to make—they're quick and easy.
Preparation nuances:
- For the dough, use cottage cheese that is not dry and not very fatty, approximately 8% fat.
- The apples in this recipe are best if they're juicy, not too soft, and not too tart. Golden apples work well. And they're not too large!
- You can roll out the dough as shown in the recipe with the photo, or fold it into an envelope, like a sochnik. It's up to you.
- If the apples are very sweet, squeeze a little lemon juice over them.

How to make apple croissants from cottage cheese dough
Add sugar to the butter and mash with a fork.
Add cottage cheese and mix with a fork or mixer.
The result should be a homogeneous mass.
Add flour and knead the dough. It's easiest to do this directly with your hands on the counter, not in a bowl. Keep adding flour to the counter until the dough comes away from your hands.
Divide the dough into two parts, wrap in film and put in the refrigerator.
Mix sugar with cinnamon. I had powdered sugar, so I used that.
Peel the apples, remove the seeds, and cut them into 12 pieces. In general, consider the size of the apples.
Sprinkle the apples with the cinnamon sugar mixture.
Roll out one part of the dough on the table (don’t forget to sprinkle the table with flour) and cut as shown in the photo.
We wrap a piece of apple in each segment.
Place the croissants on a baking sheet (lined with foil or parchment paper first). Bake in an oven preheated to 180 degrees Celsius for 25 minutes.
If desired, you can sprinkle the top with a mixture of cinnamon and sugar.
Remove the finished croissants from the oven and let them cool slightly. Serve with tea!
