This simple yet delicious salad of Chinese cabbage, corn, and apple makes a great complement to meat and fish dishes. It's also a favorite among those who enjoy interesting, easy-to-make vegetable salads.
The great thing about this dish is that you can make it almost all year round—all the ingredients for this step-by-step recipe with photos are always readily available.
Ingredients for 2 servings:
- Chinese cabbage - 200 g;
- canned corn - 80 g;
- green apple, unsweetened – half (100 g);
- lemon juice;
- natural yogurt – 3-4 tablespoons;
- salt, ground black pepper to taste.
How to make a salad of Chinese cabbage with corn and apple
Drain the corn in a sieve. Let it sit for about 5 minutes, until the excess liquid has drained.
Rinse the Chinese cabbage under running water. Remove any dirty outer leaves.
Finely chop the cabbage, using only the top parts of the leaves – tender and soft.
Wash the apple, peel it, and cut it in half. Remove the core and seeds. Slice the apple into thin, small pieces, transfer to a bowl, and sprinkle with lemon juice. Stir to distribute the juice throughout the pieces. This will prevent the apples from browning, making the salad more appetizing.
Place all prepared ingredients into a bowl: Chinese cabbage, apples and corn.
The best dressing for this salad is plain natural yogurt. You can use homemade mayonnaise or a 1:1 mixture of mayonnaise and sour cream instead, but these will add more calories.
Add the dressing to the ingredients and stir. Taste the salad to see if it needs more salt and pepper.
Transfer the salad to a salad bowl and garnish with herbs to taste.
Bon appetit!
