Beets are not only healthy, but also delicious. This root vegetable can be used to make a variety of dishes and appetizers, but most often, salads. Many people think beets are only used for vinaigrette. But today we're diversifying the menu and offering you a simple and delicious beetroot salad for every day.

It's made with boiled beets, sauerkraut, onions, and carrots. Some might mistake this for a vinaigrette, but our salad contains neither potatoes nor cucumbers. So, even if you avoid those ingredients, you'll love this dish.

As you can see, the ingredients are simple and affordable. You can buy the cabbage or ferment it yourself.

Boil and cool the root vegetables beforehand. The rest is straightforward, and any novice cook can easily replicate this recipe with photos.

Ingredients:

  • beetroot – 1 pc.;
  • carrot – 1 pc.;
  • sauerkraut – 200 grams;
  • onion (small) – 1 pc.;
  • vegetable oil – 2-3 tablespoons;
  • salt – to taste

How to make a beetroot salad for every day

Rinse the beets and carrots to remove any dirt or dust, place them in a saucepan, and cover with cold water. Cook the carrots for 20-25 minutes and remove. Leave the beets to cook for an additional 40-45 minutes. Cut the cooked beets into medium-sized cubes.

Do the same with the carrots—cut them into cubes. The combination of boiled carrots and beets is a classic, and nothing beats it.

Peel, rinse, and chop the onion into bite-size cubes. The onion's spiciness will balance the sweetness of the root vegetables.

Mix beets, carrots, onions, and sauerkraut. Season with salt to taste.

Drizzle with oil and toss the salad. You can use either refined or unrefined oil, or even commercially available—it's up to you.

    It's even more delicious if you bake the beets in the oven instead of boiling them. Place the prepared beets in a baking bag, as full as possible, right up to the top, filling the entire baking sheet. You'll never have any leftovers, and you don't need to bake them every day. I bake for 40-45 minutes at 180-200 degrees, but if you're using a cylindrical oven, 30 minutes is enough.
