Ingredients:
- raw beets – 100 g;
- white cabbage – 150 g;
- carrots – 100 g;
- spinach leaves – half a bunch;
- salt – to taste;
- ground black pepper – 1-2 pinches (optional);
- vegetable oil – 1 tbsp;
- lemon juice – 1 tbsp. (to taste).
Step-by-step cooking recipe
Cut a small piece from the head of cabbage. Shred into thin strips. If the cabbage is not very juicy or has coarse, tough leaves, add a little salt and mash with your hands.
Add carrots, grated on a coarse or fine grater, to the cabbage.
Peel, rinse, and finely grate the beets. Before adding them to the salad, taste them—sometimes beets taste bitter, so it's best to avoid them; the salad will be tasteless. In this case, you can substitute pumpkin or just carrots and cabbage.
Rinse the spinach leaves under running water and pat dry. Cut into strips and add to the vegetables.
Transfer the vegetables to a large bowl, season with ground pepper, and add salt to taste. Mix with two forks or spoons.
Season with a small amount of vegetable oil - use any oil you like.
Add lemon juice – it will give the salad a pleasant sourness and help the food to be digested faster.
