The most delicious "Glutton" salad with meat and pickles

The "Obzhorka" salad with meat and pickles will appeal to lovers of meat and vegetable dishes. Made in accordance with original culinary traditions, it can easily replace the usual classic salad.
The list of ingredients in this recipe with photos is quite modest. When choosing meat, feel free to choose any lean cut of pork or beef, or chicken breast. The meat should be pre-boiled, adding bay leaves and peppercorns.
You can use cucumbers of your choice. A few pickled butter mushrooms will add an interesting flavor variety.
The onions and carrots should be lightly sautéed until soft, so as not to spoil the salad's flavor. Homemade mayonnaise will give the appetizer a unique flavor. When purchasing dressing at the supermarket, choose the high-fat variety, as it's higher quality and contains minimal flavor additives. When serving, be sure to garnish with finely chopped herbs.
Ingredients:
- boiled pork - 250 grams;
- carrots - 0.5 pieces;
- table salt - to taste;
- onions - 1 medium-sized head;
- mayonnaise - 3 tablespoons;
- pickled cucumbers - 2 pieces;
- refined vegetable oil - 2 tablespoons;
- fresh herbs - 2-3 sprigs.
How to make the "Glutton" salad
Peel the carrots, wash them under running water, and dry them. Grate them coarsely or cut them into thin strips. Size is very important for sautéing. Peel the onion and cut into half rings.
First, slice the cucumbers lengthwise, then into small cubes. Boil lean pork or beef with spices. Then remove from the broth and let cool. Chop into small pieces.
Heat the oil and add the chopped onion. Sauté over medium heat for 2-3 minutes, stirring occasionally. Once the onion changes color, add the shredded carrots. Mix the ingredients and cover. Simmer for another three minutes at low heat until the vegetables are soft. Then transfer to a plate to cool.
In a suitable bowl, combine chopped cucumbers and meat, add cooled sautéed vegetables.
Add salt and spices if necessary. Add mayonnaise and mix.
Cover with plastic wrap and refrigerate for a couple of hours. When serving, garnish with a sprig of parsley or dill.
